Ingredients
- ⅔ Gallon water
- 2 Pounds pumpkin any type of pumpkin with edible skin will work (acorn, squash, zucchini, etc.)
- ½ Cup doenjang paste
- 2 vidalia onions large yellow onions will also work
- 3 Korean peppers
- 12 Cloves garlic
- ¼ Cup garlic paste
- 1 Tablespoon garlic powder
- 1 Brick Dubu crab is a good to add if you like seafood
- 6 green onions
Instructions
- Start cooking your medium grain extra fancy white rice
- Begin heating water in pot
- Microwave pumpkin (you can cook it in the pot, but it takes forever)
- Add doenjang paste and stir
- Cut onions, garlic, and peppers. Add to pot and stir
- Add garlic paste and stir
- Remove the seeds and other inner parts of the pumpkin. Cube the pumpkins and add it to the pot. Bring the stew to a simmer
- Strain and cut the dubu into cubes and add to the pot
- Cut the green onions and set aside as a garnish
- Serve with rice and enjoy!
